I LOVE a one pan dish. First of all, it's way less to clean. BONUS! Plus, for some crazy reason, I like my food all mixed together. I think it's a texture thing but, whatevs! To each his own!

Anyway, no need to give up yummy tacos when going low carb. Just ditch those taco shells and add in some scrumptious veggies and you've got yourself a very satisfying dinner!

You don't even have to stick with the veggies I've used in this recipe. Try to stay with the lower carb veggies like cauliflower rather than sweet potatoes, though. 

You can also use ground beef or chicken instead of the turkey meat, too.
