Mexican Cauliflower Rice

Mexican rice can absolutely be comfort food, but can it also be low carb?

Heck Yeah!! When you make it with riced cauliflower. All the yumminess, none of the bloat and weight gain!

Rice is one of those things that lots of us need to let go of when looking to improve digestion and release some excess weight. I know, it's not easy. Except when you have recipes like this one.

​Rice, as I'm sure you know, is loaded with carbs. It's just a big no, no for weight loss. Carbs increase insulin and in the presence of insulin, we store fat! I don't know about you but I'd prefer to burn it, not store it!!

Did you also know that rice, being a grain, is a big contributor to digestive problems like bloating and constipation? If you have any digestive issues or autoimmune conditions, you'll want to kick grains to the curb. Don't fret though! Substituting cauliflower for rice is an easy fix. The texture is similar, not exact! Give it a few tries before you give me the old, "I don't like it!" (Said with a whine.) ​There are tons of recipes out there to try. This one has a little kick and a lot of flavor. Some are more mild. Keep trying until you find one you like. 

Cauliflower, on the other hand, is full of antioxidants, vitamins, and nutrients. It's already a low inflammatory food but this recipe adds turmeric. That is a powerhouse of anti-inflammatory properties. You will be protecting yourself against many of the lifestyle illnesses our world is suffering from! Cancer, high blood pressure, and obesity, just to name a few.

Pro tips: 
  • Feel free to add some additional veggies to this. One that I've made in the past adds corn, peas, and carrots. Personally, I add some roasted broccoli to mine. Some chopped tomatoes would be nice, too.
  • You don't have to grate or rice the cauliflower yourself. There are lots of brands out there that do the work for you. You'll find them in both the freezer section and the produce section of your supermarket. You'll need about 6-7 cups. Less time, less mess!
  • If you don't have a food processor, you can use a cheese grater to rice the cauliflower. 
  •  ​I like to use this Mexican Cauliflower Rice as a side dish to baked chicken, but you can use any favorite protein to make it a complete dinner.
